Chili Cheese Fondue
Ingredients:
½ pound Gruyere cheese, shredded
½ pound Swiss cheese, shredded
2 tablespoons cornstarch
1 small garlic clove, halved
1 teaspoon ground cumin
½ teaspoon ground coriander
1 cup pale lager
1 tablespoon lemon juice
1 to 2 teaspoons chipotle in adobo sauce, to taste
Big Apple Bites, for dipping
Directions:
In a medium bowl, toss to combine Gruyere cheese, Swiss cheese and cornstarch. Set aside.
Rub the inside of a fondue pot with garlic and discard.
Heat the fondue pot over medium heat and toast the cumin and coriander until fragrant, about 1 minute. Pour in lager and lemon juice, bring to a gentle simmer.
Gradually stir in shredded cheese mixture a handful at a time until completely smooth. Stir in 1 to 2 teaspoons of adobo sauce as desired. Serve with pretzel bites for dipping.
Notes: Serve with a pint of beer.
